When people hear that I write Caribbean vegetarian cookbooks they are often surprised. A Bajan woman giving up flying fish and chicken? But the more I explored plant based eating, the more I realised that the Caribbean has always been a paradise for vegetarian food — we just forgot along the way.
Our Ancestors Were Plant Based Cooks
Long before fast food arrived in the Caribbean, our ancestors ate predominantly plant based diets. Rice and peas, callaloo, ground provisions, pumpkin soup, stew peas — these iconic Caribbean dishes are all naturally plant based or easily made so.
